Grumble is at the orthodontist tonight with his Dad and it's already after 7:00 pm so I guess they're going out to eat before coming home. I need soup to fortify myself on this unusual Atlanta night of snow flurries. And in case the kid hasn't eaten and had his braces tightened, all the better to have soup on hand.
Onion soup -- so elemental. Onions. Wine. Bread. Cheese. I have no real recipe, I simply:
Slice 3 yellow onions very thin, and then halve each round.
Saute them in a big pot with a glug of olive oil and a 1/2 stick of butter.
When they get really nice and brown, I toss in a generous Tb. of flour and let that meld in.
Then a container of chicken stock or beef stock, and a nice glug of white wine or cognac.
Add salt and pepper to taste.
If you are lucky enough to still have fresh thyme in your garden (I am, even in snowy ATL), add some thyme leaves.
Simmer gently.Toast a slice of nice bread. Grate some swiss cheese, or even better, gruyere cheese.
Ladle soup into a bowl, top with toast, sprinkle cheese on top.
You can let it all melt in a 350 oven, or you can ladle in a bowl and top with the cheese and the toast.
Take a tray to bed and slurp your soup while watching junk TV. Yum.
Soup in bed with junk TV?

I loves me some good onion soup... and the best one is the homemade kind, where you can put as much yummy, gooey cheese on that big-ass crouton as you like.
